Pack the flavor in to the contents of your dish without a rich sauce!
Pasta is my favorite food by far, and when I have a craving I usually want a thick cheesy sauce. This packs the calories on most of the time, but it doesn’t have to be that way! You can still make a healthy version of pasta and lighten up the sauce without missing out on delicious flavor. A type of pasta that I make at least once a month is gnocchi. These potato dumplings are hearty and can be packed with flavorings. Just throw in a few other ingredients and you can have a savory dish to enjoy!
For this recipe I chose to keep it simple with just the gnocchi plus some chicken and a vegetable coated in a light herbed oil. Prep the sauce by mixing extra virgin olive oil with minced garlic, onion power, thyme and pepper. Set aside until needed.

Start by cubing the chicken breast and chopping green beans to a 1 inch size. Boil the water for the gnocchi so that can be going while you cook the meat and greens. My best friend taught me to make homemade gnocchi, but when I am short on time for dinner prep I do have a go to option. I buy the Racconto brand gnocchi, which has a basil and sweet potato version that I am quite obsessed with!
Cook the chicken in some olive oil on a skillet with a dash of pepper, sea salt and some thyme. I definitely go for a one pan option when possible so push to the side when halfway cooked and add in the green beans. Once the gnocchi is ready, the green beans tender and the chicken cooked through you can add everything to one pot and drizzle with the herbed oil. Crumble the feta cheese on top for the final touch and then serve!
Green Bean & Chicken Sweet Potato Gnocchi
Ingredients
- 8 oz chicken
- 16 oz gnocchi sweet potato
- 1 cup green beans
- 1/4 cup feta cheese crumbles
- 1/4 cup olive oil extra virgin
- 1 clove garlic
- 2 tsps thyme
- 1 tsp onion powder
- 1/2 tsp pepper
- 1/4 tsp sea salt
Instructions
- Prep the sauce by mixing extra virgin olive oil with minced garlic, onion power, thyme and pepper. Set aside until needed.
- Cube the chicken and chop the green beans into 1 inch strips. Cook both in some olive oil on a skillet with a dash of pepper, sea salt and some thyme.
- When everything is done add it together and drizzle with the herbed oil. Crumble the feta cheese on top for the final touch and serve!
This sweet potato gnocchi recipe was light yet still filling, and perfectly healthy! What makes it powerful is the flavoring in the gnocchi. Plus, it can be made in less than 20 minutes- so dish up!
