A good, healthy breakfast is so important yet so often skipped. Most of the time it’s a meal that is overlooked due to the fact that we are scrambling in the mornings to get to a job and simply lack the time to cook a sustainable breakfast. That’s where make ahead breakfasts save the day!

I keep seeing baked oatmeal all over Pinterest so I decided to finally try it. The best part about this concept is the fact that it can be changed up every time you make it. If you are the type of person that gets bored eating the same thing over and over then you can make a different version each time! For my first one I chose two of my favorite oatmeal fruits- blueberries and apples. I wanted to include a nut so I added some almonds in. Just to give an extra power boost to my recipe I mixed in matcha powder as well.

Matcha has an incredible amount of undeniable benefits! It is an energy and metabolism booster, a mood enhancer, a detoxifier and can lower cholesterol. It is also very high in antioxidants. A regular intake of matcha can help build up your immune system and it has anti-aging properties since it improves your skin. Getting matcha into your body can reduce stress and increase concentration too. If you aren’t drinking matcha tea, why not eat some instead?

Start off by chopping up the apple. Place this in a bowl with the blueberries and almonds, then set the mix-ins aside.

In a separate bowl combine the oats, matcha powder, cinnamon and baking soda. Next add in the milk, egg, agave, peanut butter and vanilla. Stir everything together, then throw in the fruit and nuts.

Spray or grease the pan before pouring the mixture in. I chose to use coconut oil, which also added a nice flavor. Bake at 375 for 25 minutes. When done just remove and serve hot!

Blueberry Apple Matcha Baked Oatmeal

  • 1 cup oats old fashioned rolled
  • 1/3 cup blueberries
  • 1 apple green
  • 1 tbsp peanut butter
  • 1/4 cup almonds shaved
  • 1/2 cup milk almond-cashew
  • 1 egg
  • 1 tbsp agave
  • 1 tsp vanilla
  • 2 tsp matcha powder
  • 1 tsp cinnamon
  • 3/4 tsp baking soda


  • Chop up the apple and place in a bowl with the blueberries and almonds. Set aside.
  • In a separate bowl combine the dry ingredients. Next add in the wet ingredients and stir. Once all mixed together you can include the fruit and nuts.
  • Spray or grease the pan before pouring the mixture in. Bake at 375 for 25 minutes.
  • Remove from oven and serve, or store in the fridge for eating later!


Baked oatmeal can be reheated, which makes it a perfect meal prep breakfast idea!
