There’s nothing quite like a simple steak dinner, but have you ever tried a steak roll-up?
You can marinate a steak in tons of different ways, but there are only so many toppings you can put on them. Filling it however, this provides so many more options! When you see meat or vegetable roll-ups they always stand out and spark your interest. They make a wonderful presentation meal and it really doesn’t require much to put it together.
Flank steaks are thin, flat cuts of meat that aren’t pricey. I buy them often to slice up and use in stir-fry, but they can also be transformed into a decadent fancy dinner. The only other thing you need is your filling of choice. For this recipe I chose a cheesy garlic oil herb spread with a layer of spinach and pistachios. Introducing Pistachio Steak Roll-ups!
Ingredients needed are the flank steaks, spinach and pistachios. Then you will need garlic, parmesan, olive oil, pepper, sea salt and basil for the filling. You can use fresh basil leaves to mix with the spinach if you would prefer.
Mix the sauce first by combining the oil, parmesan, seasonings, garlic and herbs. I had fresh minced garlic (you can find my recipe for homemade here), but you can easily just dice up some cloves.
Now you are ready to start layering the steak filling! Set each flank steak flat on a surface and coat one side with the seasoned garlic and cheese oil. Top with the crumbled pistachios.
If you want to I recommend using a meat tenderizer just to make the cut as flavorful as possible. The one I use is below! It makes the process fast and is very easy to use.
Next is the layer of spinach. I choose to break the stems off and tear them up slightly if they are really large leaves. If you are using fresh basil you can either mince it up to put in the spread or include some along with the spinach.
Time to roll them up! Its best to pull the spinach towards the end that you are starting from as you roll, otherwise it gets all pushed towards the opposite side and will be hanging out. Once complete I recommend securing with a toothpick. I also sprinkle the top with some extra seasonings, herbs and a little more parmesan.
Bake at 375 for about 30 minutes. Once cooked remove from oven and serve while the cheese is still gooey! I chose to pair my pistachio steak roll-ups with carrots, quinoa and some homemade gluten-free bread (recipe can be found here).
Pistachio Steak Roll-ups
Ingredients
- 2 flank steaks
- 2 cloves garlic
- 2 tbsp parmesan cheese
- 2 tbsp pistachios pieces
- 1 cup spinach
- 2 tsp basil dried
- 2 tbsp olive oil extra virgin
- 1/4 tsp pepper
- 1/4 tsp sea salt
Instructions
- Mix the sauce first by combining the oil, parmesan, seasonings, garlic and herbs.
- Set each flank steak flat on a surface and coat one side with the seasoned garlic and cheese oil. Top with the crumbled pistachios and then a layer of spinach.
- Roll the steaks from one end to the next and secure in place with a toothpick.
- Bake at 375 degrees for 30 minutes. Remove and serve hot!
Notes
Now that you know how to make steak roll-ups, think of all the different ways you can fill them! My favorite way is to spread pesto on them- so simple and satisfying!
