Fill your bowl with green goodness!
You know those lovely power bowls you keep seeing? Think they are beautifully complicated? Not so! A big bowl of wild greens can be less than 5 ingredients and take less than 10 minutes to put together. This summer salad is tossed with warm roasted veggies (cooking optional) and an organic green goddess dressing. The whole bowl can be made quickly and is budget friendly! Plus it feeds a crowd or makes for perfect lunch prep!
We love hosting dinner parties, and what better presentation on the table than a big bowl of health for our guests? I put this summer salad together on a whim and it took no time at all. They key is in the steamed veggies mixed in with the greens.
All you need is a base of spring mix greens (or whatever you prefer) plus just two veggies- corn and asparagus. I chose to steam mine but you could roast them too!
Mix together in a big bowl and toss with dressing. The choice for my wild greens asparagus and corn summer salad is featured below!
The green goddess dressing I used is from the brand Annie’s (organic and gluten free). I learned that it is quite difficult to find in the stores- so stock up!
This salad was beautifully vibrant and plantiful! Eat green!

Wild Greens Asparagus Corn Summer Salad
Ingredients
- 16 oz spring mix greens
- 1 bundle asparagus
- 1 can corn low sodium
- 1/4 cup green goddess dressing
Instructions
- Drain the corn and set aside. Chop the ends off the asparagus and cut in to 1-2" pieces. Place both in a steamer for a few minutes to cook slightly.
- Mix together in a big bowl with spring mix greens and toss with dressing.
