Baked pork chops just got even easier!
I’ve you haven’t jumped on board the sheet pan craze then you better catch up! It will seriously change your life. One pan meals are my new favorite way to eat healthy on a busy weeknight. I will have to say that a go-to of mine is pork and potatoes, and no it does not take an hour before you are ready to eat!
I don’t know what it is about mustard, pork and potatoes but it works. Few ingredients but a ton of flavor is always key to a quick meal. To make the sauce for this recipe mix the dijon with parmesan cheese, minced garlic, oil and seasonings. The herb I chose was thyme. Coat the pork chops and layer on a greased or non stick baking sheet.

Dice the potatoes and arrange everything on the pan. I used pearl onion in mine and medium sized orange and yellow carrots. Drizzle the veggies with oil and some additional seasonings.
Bake at 425F for 20 minutes. Remove and serve up your sheet pan pork and veggies! Don’t worry about clean up- that’s a breeze since it should just be a cutting board, the cooking pan and your plate!
Sheet Pan Dijon Parmesan Pork & Veggies
Ingredients
- 2 pork chops boneless
- 1 russet potato small-medium
- 10-20 carrots medium
- 1/2 onion
- 1/2 cup Parmesan cheese
- 2 tbsp dijon mustard
- 2 tbsp olive oil
- 1 garlic clove
- 1 tsp thyme
- 1/2 tsp pepper
- 1/4 tsp sea salt
Instructions
- Mix dijon with the cheese, minced garlic, oil and seasonings. Coat the pork chops.
- Dice the potatoes and arrange everything on a greased or non-stick pan. Drizzle the veggies with oil and some additional seasonings.
- Bake at 425F for 20 minutes. Remove and serve up!
If you make two pans (or depending on how big your pans are if you double the amount) then you can use the leftovers for quick meal prep for the week! I always find it so hard to cook and then immediately store everything so I at least like to enjoy the fresh, hot food for a meal first.
