This lightened up salad is loaded with protein!
A salad doesn’t have to be boring or too crazy. This simple bowl of fresh greens is deliciously different and only takes 10 minutes to put together! No need to buy a pre-made salad dressing either. You can just make an extremely easy homemade chia seed balsamic vinaigrette! This salad recipe is light and refreshing, plus a great serving of healthy fats, fruits and vegetables.
Cook the chicken in a skillet with some oil and balsamic vinegar. While it cooks you can prep the dressing by combining some olive oil with balsamic vinegar and a dash of pepper. Set aside. Chop up the strawberries and green apples.
I chose to use a flavored balsamic vinegar. One of my favorite brands is Pastamore and their white balsamic pear vinegar was a perfect selection for this recipe! It paired very well with the fruit theme.
Mix the greens with the chicken, fruit and nuts. Drizzle with the dressing and sprinkle the chia seeds over. Enjoy!
Balsamic Chia Chicken Fruit & Nut Salad
Ingredients
- 2 head lettuce romaine
- 8 oz chicken breast boneless skinless
- 1/2 cup strawberries
- 2 green apple small
- 1/4 cup walnuts
- 1/4 cup almonds pieces
- 2 tbsp olive oil extra virgin
- 4 tbsp balsamic vinegar white pear
- 4 tbsp chia seeds
- 1/4 tsp pepper cracked

- Once chicken is ready slice into strips. Chop up the strawberries and apple.

Notes
This balsamic chicken salad makes for a great weekly meal prep. Just be sure you keep the liquids from the dressing at the very bottom and the lettuce at the top. I also sprinkled the chia seeds over the greens right before putting the top on. This keeps them from touching the dressing and expanding prior to when you are ready to eat.
