Try putting a sauce on your meat that actually benefits you!
A common dinner I put together is healthy baked drumsticks because they are budget friendly and easy to dress up! This particular dish pairs them with some baked fruit, which I’ve decided I don’t do often enough, and the sauce is a little different from the usual.
I chose a green apple and some red grapes for the fruits in this dish. Start by cubing the apple. Drizzle some oil in the bottom of a baking dish and fill with both fruits.
This little kitchen gadget makes slicing apples a breeze!
Chicken doesn’t always need to be slathered in a rich marinade in order to taste juicy and flavorful. I used some apple cider vinegar and applesauce. This sounds basic but definitely didn’t taste so! I did add a little bit of honey just to counter the apple cider vinegar some, but that is optional of course. Mix the wet ingredients and seasonings together and then coat the chicken drumsticks. Place the drumsticks over the bed of apples and grapes. Bake at 400 for about 40 minutes.
About halfway through you can crumble the goat cheese on top, then put back in the oven to finish cooking.
Warm fruit and gooey cheese were the perfect addition with this sweet and juicy meat. I know apple cider vinegar is good for you but I mostly just take a shot to build my immune system. After this point though I will be cooking with it on a regular basis! I combined mine with some sautéed green beans and walnuts (one of my favorite quick sides) over a bed of rice. At first my husband was pretty skeptical about warm grapes, but I will say that this is a man approved meal!

This recipe is gluten free! It is also low carb if you don’t choose to add rice to it. If you remove the cheese and use unsweetened applesauce then it can easily be a Paleo recipe too!
