I take full advantage of fig season and use them in smoothies, to make jam, baking treats and much more! Figs are a wonderful addition to savory dinner dishes as well. One of my favorite balsamic vinegar flavors to use is fig, and the other day I figured I should just throw in some actual figs too!
Often times people end up cooking the same basic vegetables over and over again, but there are so many out there to experiment with! One that I particularly love is beets. I used to have a really horrible impression of them and have pretty much avoided eating beets my entire life. One day recently I was at a salad bar and they were an option so I threw a small one on my plate. I definitely learned that you should re-try things later in life! I was pleasantly surprised, and I will admit I went back for quite a few more. Now I juice them, cook with them, snack on beet chips…. even try to grow them in my garden.
For this chicken recipe I felt like some stove cooked figs and beets would be the perfect pairing with my balsamic chicken and feta asparagus. The best part is I cooked all of this in one skillet in about 10 minutes or so. Easy, and definitely impressive if serving to guests! On top of that factor this meal is also loaded with folate, iron, calcium, protein, fiber and antioxidants. Grab a fork and eat up!

Start by quartering some fresh figs and then peel and cube a red beet. Saute the root vegetable in some oil first for a few minutes. Push to one side of the skillet and add the chicken in. Place asparagus on the other side, then drizzle all with some balsamic vinegar, a sprinkle of pepper and dash of sea salt. Flip the chicken after a few minutes and top with some rosemary. Add in the figs to the sides with the beets when the chicken is about halfway cooked. The feta gets crumbled on last just to get slightly warm so it can be gooey.

The total cook time should be about 10-15 minutes. When ready serve it up! The only thing that I could imagine would make this better would be to add some nuts to it.
Beet and Fig Balsamic Chicken with Asparagus
- 8 oz chicken skinless boneless
- 20 spears asparagus
- 4 figs
- 1 beet small
- 2 tbsp balsamic vinegar
- 1 tbsp coconut oil extra virgin
- 2 tbsp feta crumbled
- 2 tsp rosemary
- 1/4 tsp sea salt
- 1/4 tsp pepper
- Start by quartering some fresh figs and then peel and cube a red beet.

- Flip the chicken after a few minutes and top with some rosemary. Add in the figs to the side with the beets when the chicken is about halfway cooked. Crumble feta over the asparagus about a minute prior to the finish.
The flavor combination of the earthy beets and sweet figs was mouth watering goodness! It turned into such a colorful dish, and in my opinion the more color in the food the better it is for you. This beet and fig balsamic chicken is wonderfully nutritious for your body, so enjoy!

All you need to do is remove the feta crumbles! Of course make sure the balsamic doesn’t have any added sugar in it.
