Healthy quick bread in under 10 minutes that won’t break your gluten-free diet!
When you consider making bread you know it involves kneading, rising and most of all time. The majority of recipes are this way, but there are a few that make it capable to have homemade bread in under an hour. Gluten free quick bread exists and it’s been a common go-to for me!
While cooking dinner one night I decided bread would be the perfect addition to the meal, but unfortunately I didn’t have any. At this point there wasn’t much time left until the rest of the food was finished, but I did a quick Pinterest search anyway. I was hoping I could find some bread that could be made in 10 minutes or less. Just when I figured it might be impossible, I stumbled upon this recipe from I Heart Vegetables. It required only 5 ingredients and the prep and cook time was completely doable!
This recipe is customizable for your choice of flour and herbs to use!
The recipe is for a thick flat bread with an olive oil and herb flavor. I decided to make my bread using gluten free flour and they turned out perfect! Start by combining the dry ingredients together in a bowl. Next, add the warm water and olive oil little by little while stirring. The mixture will thicken up to form a dough. I chose to add in basil for my herb.
Once you have the dough ready it’s time to cook your gluten free quick bread! There is no step in-between, which is the main reason I picked this recipe. I used a cast iron skillet because that was what her recipe called for, so I’m not sure how these would turn out if you chose to use a regular pan. Heat up the iron skillet and pour in a little bit of olive oil. Drop some of the dough onto the skillet and form it like you would a pancake. Cook for a few minutes and then flip to the other side.
Once the batter is all gone serve the bread immediately. This made three dense flat breads that were about 4″ in diameter. I don’t know how these keep because we ate them all up!
Gluten-Free Herbed Olive Oil Flat Bread
Ingredients
- 1 cup all purpose flour gluten-free
- 2 tbsp olive oil extra virgin
- 1/3 cup water
- 1 tsp baking soda
- 1/2 tsp sea salt
- 1 tsp basil dried (optional add-in)
Instructions
- Combine the dry ingredients together in a bowl. Heat up the water separately.
- Next, add the warm water and olive oil little by little while stirring. The mixture should form a dough.
- Heat some oil in an iron skillet on the stove. Drop some of the bread dough onto the skillet and cook for a few minutes, then flip and cook the other side.
- Repeat until all the batter is gone. Serve the bread immediately.
