Beets and bacon are a delicious breakfast match!
I am all about breakfast time, and even more so when it’s prep for the week ahead! One of my main go-to morning meals on the go are egg cups. I have even made these with random leftovers and they turned out delicious. Just throw some mix-ins in to beaten eggs and bake, then store in the fridge! For these I chose to pair two ingredients that I have never tried combining before, and it has certainly opened doors for future recipes!
Cook the grits and bacon while you peel and chop the beets and onion. To make things easier I put the bacon in the oven. If you have never baked bacon you are definitely missing out on this kitchen trick! I am pretty sure I will never make bacon any other way now. Just put it in the oven at 400F for about 10 minutes (checking depending on how done you like it).
Whisk the eggs with milk in a bowl. Add in the grifts when done and stir until creamy. Pour in the chopped beets and bacon pieces. Sprinkle in the shredded cheese and seasonings.
Spray a 12 cup muffin pan and fill with the mixture. Bake at 375F for 20 minutes.
Remove from oven and let cool some before serving. If making as a meal prep let cool completely before putting in a container.

Ingredients
- 6 strips bacon
- 1 beet
- 8 eggs
- 1/3 onion
- 1/2 cup grits
- 1 cup water
- 1 cup milk
- 1/4 cup cheese cheddar
- 1/4 tsp salt
- 1/2 tsp pepper
Instructions

Egg cups are a simple and healthy breakfast option when you are needing something good to grab and go. What really makes these stand out is the addition of grits. I don’t think I will ever make egg cups any other way now! The grits really added to the texture and made these richer than normal. I also never would have thought beets and bacon would be such a wonderful mix of flavor together!
