There’s nothing quite as satisfying as a colorful array of veggies that can be cooked up on a whim!
Sides can often be forgotten when you are focusing on a main dish, so it’s good to have some quick back-ups you can always count on. I always try to plan my sides ahead of time but occasionally I just do vegetables I have on hand as an afterthought. Regardless, they should still be tasty!
One of my favorite dishes when I need quick healthy veggies is to make some sautéed french beans, especially with walnuts added! In the past few years I also discovered rainbow carrots and have been cooking them quite frequently. (And I DO think each color tastes slightly different!) The other night I decided to throw both together and really loved the combination.
Start by breaking the green beans in half. Next, cut the carrots so they are about the same size (2-3″ length). I then sliced them so they were the same thickness as the green beans. I figure they can all cook the same this way…. but I’m sure a bit of it was random OCD as well. Lastly, prep the garlic. You can view my post on how to make your own minced garlic so you always have some ready! Heat the oil over a skillet with sauté up the garlic. Add in all the veggies and sprinkle with lemon and seasonings.
Cook over low-medium heat (uncovered) for about 10 minutes, stirring occasionally. Once the green beans and carrots have reached your desired tenderness then remove from heat and dish up! I personally like mine to be a little crunchy still.
French Beans and Rainbow Carrots Veggie Saute
Ingredients
- 4 large carrots orange and yellow
- 1 cup french green beans
- 1 tbsp minced garlic
- 1/2 lemon
- 2 tsp parsley
- 1 tbsp olive oil extra virgin
- 1/2 tsp pepper
- 1/4 tsp sea salt
Instructions
- Wash the veggies. Break the green beans in half. Cut the carrots so they are about the same size (2-3" length).
- Heat oil over skillet with some garlic. Add in the vegetables and sprinkle with lemon and seasoning. Cook over low-medium heat uncovered for about 10 minutes, stirring occasionally.
- Once cooked to your desired tenderness remove from heat and serve!
Next time you are at a loss for a side, or just need some quick healthy veggies keep this one in mind! It’s not only colorful but a great way to get a mixture of plants into your diet.
