Adding pineapple to cilantro lime chicken gives a sweetly unexpected twist to a popular Mexican food dish!
Chicken is a meat that I tend to gravitate towards when I am trying to come up with a new recipe because it is so transformational. For a while now I have been wanting to make cilantro lime chicken, but hesitated due to the fact that I wanted to add a little extra to it. What I ended up putting together was Mexican food with a twist!
I started by coating chicken breasts with olive oil and lime juice. I chose pineapple to boost the recipe and topped both off with a sprinkle of fresh cilantro.
I used a meat tenderizer on the chicken so it could soak up all the juices. The one I have is below! It is extremely easy to use and makes a huge difference!
That is all it took to prep this delicious chicken! If you add some finely chopped red peppers it too it pairs very well. I baked it at 375 for about half an hour and it was as simple as that. Seriously.
The pineapple wasn’t overpowering at all and the juice soaked in to the chicken just enough. I really loved the flavor of this recipe and it will be one of my go-to meals from now on!
Cilantro Lime Pineapple Chicken
Ingredients
- 2 chicken breasts boneless/skinless
- 1/2 cup pineapple
- 1/2 lime
- 2 tsp cilantro
- 1/2 tbsp olive oil extra virgin
- 1/4 tsp pepper
- 1/4 tsp sea salt
Instructions
- Dice up some pineapple and put in a baking dish. Finely chop the cilantro if you are using fresh herbs.
- Place the chicken in with the pineapple and lightly coat with some olive oil, then the lime juice. Sprinkle with the herbs and seasonings.
- Bake at 375 degrees for about 30 minutes. Cut the chicken to make sure it is fully cooked through, then serve!
While the chicken cooked I put together a little something to go with it. The side I paired this with is very similar to my other Mexican style quinoa recipe. The difference was using black beans rather than corn, no tomatoes and cilantro and lime to season it.
The outcome was a perfect combination. I love experimenting with all of the different ways quinoa can be dressed up!

This dish is one that I also made for a meal prep before camping one weekend. I chose to not add the quinoa because it was easier that way. I cubed the chicken and put it in a foil dish with the pineapple. Then just squirted lime juice over everything and topped it with cilantro, a little pepper and salt. It was incredibly easy and cooked wonderfully over the fire! The campfire cilantro lime pineapple chicken was significantly juicier than when I baked it.
