Peanut Butter Banana Shakeology Muffins

It’s about time you indulge in a treat that is benefitting your body!

I love foods that can be eaten as a snack, part of a meal or even a dessert! These gluten-free muffins are a wonderful addition to your breakfast or can even be a rewarding pick-me-up later in the day. They are made without flour and topped with a superfood frosting to make them completely guilt-free and healthy!

As some of you may know I recently decided to rev up my health and fitness habits to the max with my wedding coming up in the next three months. While on 21 Day Fix I noticed my biggest struggle was nixing sugar from my diet. It has been a main focus of mine to cut my sugar intake for a while but I never attempted it to this level. After a while I began to want it of course, so I started researching approved treats that I could enjoy. I definitely wanted to try something that included my new superfood protein powder of choice- Shakeology! I discovered that most everything of this sort was no-bake because you should avoid cooking Shakeology since it will destroy all of the powerful nutrients. This eventually led me to the idea of using it as a topping to a baked good instead!

I found a very healthy muffin recipe from Like Mother Like Daughter’s Blender Muffins that included oats, bananas and greek yogurt in the ingredients. I chose to do a little less honey for mine just to stay on track as best as possible. 21 Day Fix does allow some honey but for the most part focuses on natural sugar only (such as fruits) so I really wanted to stick with a minimal amount. Just make sure you use extra ripe bananas to make up for it!

These took hardly any time at all to put together. Everything went directly into a mixer to combine until smooth, then pour into greased muffin tins. Bake at 400 for about 10 minutes and set aside to cool.

And now for the best part- the addition of the energizing superfood powder! I know without a doubt that I will be using this again in future creative recipes. It blended wonderfully together and the texture came out so creamy. Quick, easy and loaded with goodness- you can’t go wrong with licking that off the spoon! For the healthy frosting you will need only 4 ingredients!

-1 1/2 c plain nonfat Greek yogurt
-3 tbsp natural peanut butter
-2 tbsp Shakeology (about 1/2 scoop)
-1 tsp flax seed powder

I am always trying to come up with new Shakeology recipes other than just a shake. I personally chose the Strawberry flavor for this, but it would be just as good with vanilla or chocolate! Please know this is not a recipe catered only to those who are using this Beachbody product. You can easily substitute a small amount of cocoa powder, matcha or something like that in place of the Shakeology. Peanut Butter Banana Shakeology Muffins

Banana oat muffins with peanut butter and greek yogurt, topped with a Shakeology frosting.

Cook Time 10 minutes

Ingredients
  

  • 2 cups oats old fashioned
  • 3/4 cup peanut butter
  • 2 bananas ripe
  • 2 eggs
  • 2 cup greek yogurt plain nonfat
  • 2 tbsp honey
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 scoop Shakeology strawberry flavor
  • 1 tsp flax seed powder

Instructions
 

  • Combine 1/2 cup greek yogurt with 1/2 cup peanut butter, the oats, bananas, eggs, honey, vanilla baking powder and salt in a mixer. Pulse until all is blended together.
  • Pour into greased tins and bake at 400 for 10 minutes. Set muffins aside to cool while you whip up the frosting.
  • Put 1 1/2 cup greek yogurt, 3 tbsp peanut butter, 1/2 scoop of Shakeology and a little flax seed powder into a mixer and stir until it forms a creamy texture. Spread on top of the muffins and store in the fridge!

Notes

You can use vanilla or chocolate Shakeology instead.

When making this as part of a meal prep each muffin counts as one serving (breakfast, snack or treat). Each of those servings consists of 1/4 red, 1/2 yellow, 1/3 purple and 2 3/4 tsp.
If you are on the low calorie range one muffin with frosting will put you slightly over on tsp due to the nut butter so limit yourself as best as you can!
