Pumpkin Spice Trail Mix Bars

Homemade breakfast bars with oats, dried fruit, pumpkin spice flavor cheerios and some nuts and seeds.

Ingredients
  

  • 2 cup cheerios pumpkin spice
  • 1 cup oats old fashioned
  • 1/4 cup granola cocoa
  • 2 tbsp pumpkin seeds
  • 1/4 cup almonds
  • 2 tbsp goji berries
  • 2 tbsp shredded coconut
  • 2 tbsp chia seeds
  • 1/2 cup peanut butter creamy
  • 1/3 cup dates pitted
  • 1/3 cup honey
  • 2 tbsp coconut oil extra virgin

Instructions
 

  • Put all the dry ingredients together in a bowl. Set aside.
  • Place dates in a food processor and pulse until smooth. Heat up the peanut butter, honey and coconut oil separately and stir until creamy. Pour over the bowl and mix together until fully coated.
  • Line a baking sheet or pan with parchment paper. Spread the mixture out and flatten until all formed together.
  • Freeze for 10 minutes and then cut into bars. Store in air tight container in the fridge.
