Sweet Potato Pancakes

Sweet potato pancakes are simply delicious and seriously SO simple….

One of my cheat meals is usually pancakes or waffles, but I had breakfast out the other morning and happily ordered some gluten free waffles off the menu. They were made with sweet potatoes, which completely blew me away. No flour of any kind whatsoever! They didn’t taste like what I expected at all! I immediately wanted to make some for myself of course. I don’t own a waffle maker (yet) so I thought, why not try them as pancakes?!

I searched for a recipe and found one from Happy Healthy Mama that I followed. All you need is three ingredients- just get a sweet potato, egg and spice of your choice. I figured cinnamon would be the best. There is no flour needed because the sweet potato works as a substitute all on it’s own. It really doesn’t get any easier (or healthier) than that!

Sweet Potato Pancakes recipe

First, you need to cook a sweet potato. Bake at 400 for about 45 minutes. Once ready, remove the skin and discard. Mash the sweet potato and then stir with an egg and some cinnamon.

Heat butter on a skillet and drop some batter in. Cook for a few minutes on medium heat and then flip to the other side. That’s it- now eat up! These sweet potato pancakes have such a soft melt-in-your-mouth texture and the flavor is just perfect.

Total Time 1 hour 5 minutes

Servings 1 person

Ingredients
  

  • 1 sweet potato
  • 1 egg
  • 1 tsp cinnamon

Instructions
 

  • Cook the sweet potato in the oven at 400 for about 45 minutes until soft.
  • Once ready, remove the skin. Mash the sweet potato in a bowl with one egg and a dash of cinnamon. Stir vigorously.
  • Heat butter on a skillet and drop some batter in. Cook for a few minutes on medium heat and then flip to the other side. Remove and serve!

Next time you are craving some pancakes try these out! They are a wonderfully different way to make them and packed with nutrition! The only downside is the time it takes for the sweet potato to get soft enough to use. Other than that, this recipe is hands down one of the easiest breakfasts I have ever prepared.
