Waffles may be your guilty pleasure, but they can be guilt-free too!
I absolutely loooove waffles…. carbs and all. Sometimes I would like to indulge in a girly version though, one that I can be completely satisfied with after consumption. This brought on a homemade recipe that is gluten free and even swaps out bad fats with healthy ones. Since I wanted some girl power waffle mix I threw in goji and peaches too!
I picked up the base for the recipe from The Stay at Home Chef’s blog. For mine I chose a gluten free baking flour and added walnuts, goji powder and fresh peaches. For the greek yogurt you can use plain, vanilla or honey flavored!
Start by peeling and dicing the peach. Combine the milk, yogurt and honey in a bowl and whisk in the eggs. In a separate bowl sift together your gluten free flour of choice with the baking powder, sea salt and some goji powder. Add in to the wet ingredients and stir until well mixed. Throw the peaches and walnuts in.

Heat up your waffle iron and pour in the batter when ready. Cooking times can vary, but usually about four minutes or so. Once the last waffle is finished serve warm! I topped mine with a dollop of greek yogurt, some sliced peaches, crushed walnuts and a drizzle of agave.
Toppings are totally optional of course, since everything is already in the batter! Each bite is sweet deliciousness!

- 1 tbsp agave
- 1 tbsp goji powder
- 4 tsp baking powder
- 1/4 tsp sea salt
- 1/4 cup walnuts pieces
- 1 peach large
