Baking pancakes in a pan is a quick way to make a loaded breakfast simple in the mornings. This non-traditional way to make pancakes completely changes them! I also found that it made a perfect morning meal prep for the week. Introducing matcha chocolate nut pancake squares!
One weekend I was looking for ideas to cook something for us and came across Big Red Kitchen’s recipe for pancake squares. Not like pancakes are difficult, but this seemed extremely easy and I was intrigued by baking them instead.
I love jazzing up pancakes with some wonderful add-ins. For mine I decided to mix in matcha powder for an extra boost of energy to get our morning going. I then chose some nuts and I figured you can’t go wrong including some chocolate chips! I put all the ingredients in a bowl to stir together. Start with the wet first, then slowly mix in each of the dry and add the extras last.
Preheat the oven to 350 degrees. Once the batter is all ready just pour into a pan and bake for 20 minutes. Make sure to check and see if they are still gooey or need some more time before removing from the oven.
Once it’s done let it cool slightly before slicing and then serve hot! Cut it like you would brownies.
I chose to top mine with coconut shavings and some agave! These were so moist and delicious. I will definitely be making them again!
I highly recommend investing in some matcha powder. I use it in smoothies, baking, overnight oatmeal and chia pudding, homemade breakfast bars, etc. because it’s such a great addition! This is the brand that I use and a little bit goes a long way so it’s well worth having on hand.

I personally made my pancake squares gluten free by using almond flour. I also chose to use almond milk rather than regular milk. This was just my preference since I try to bake gluten free as often as possible, and I wanted some extra nutty flavor in mine.
