  1. Cube the chicken and dice the fruit and veggies. Set aside.
  2. Mix together the marinade by combining the soy sauce, sesame oil, rice wine vinegar and honey together in a small bowl. Stir in some minced garlic and ginger along with a sprinkle of sesame seeds.
  3. Heat a little oil in a skillet and cook the chicken. When halfway cooked throw in the vegetables. Pour the sauce over and cook completely. Add the cashews to the sauté last and stir all together.
  4. Remove from heat and enjoy while hot!
