Hawaiian Chicken

Pineapple can really be a subtle treat when used in cooking a meal!

I love cooking with chicken because it really can just absorb whatever marinade and other ingredient flavors it is combined with! One of my favorite combinations is chicken with pineapple. A sauce I make quite often is a teriyaki one that when paired with these two foods creates a delicious hawaiian chicken!

Cube the chicken and dice the fruit and veggies. Set aside. I personally chose to use fresh pineapple, but you can use canned (just drain the juice). I also did a variety of colored bell peppers for mine. Of course you can do just one kind though!

Once you are done with the meat and produce prep heat a small amount of oil on a skillet and throw in the chicken. While it cooks you can make the sauce! Combine the soy sauce, sesame oil, rice wine vinegar and honey together in a small bowl. Stir in some minced garlic and ginger along with a sprinkle of sesame seeds. Simple sauce, but one of my most used!

When the chicken is halfway cooked add in the vegetables. Pour the sauce over and cook completely. Add the cashews to the sauté last and stir all together. Remove from heat and serve while hot!

Eating better doesn’t mean you have to eat boring meals, you just have to get creative with cooking right!

I absolutely love the flavor in this dish! You can’t go wrong with the addition of pineapple and cashews in my opinion.

Hawaiian Chicken

Chicken in a teriyaki sauce with pineapple, cashews and vegetables.

Ingredients
  

  • 1.5 lb chicken
  • 1 cup pineapple chunks
  • 1 cup bell peppers diced- mixed colors
  • 1/4 onion
  • 1/4 cup cashews
  • 3 tbsp soy sauce low sodium
  • 2 tsp sesame oil
  • 1 tsp rice wine vinegar
  • 3/4 tbsp honey
  • 1 clove garlic
  • 2 tsp sesame seeds
  • 2 tsp ginger

Instructions
 

  • Cube the chicken and dice the fruit and veggies. Set aside.
  • Mix together the marinade by combining the soy sauce, sesame oil, rice wine vinegar and honey together in a small bowl. Stir in some minced garlic and ginger along with a sprinkle of sesame seeds.
  • Heat a little oil in a skillet and cook the chicken. When halfway cooked throw in the vegetables. Pour the sauce over and cook completely. Add the cashews to the sauté last and stir all together.
  • Remove from heat and enjoy while hot!

This recipe helps to teach you to make your own sauce, but of course you can use a quick substitute instead. I highly recommend this one (one of my most used favorites):

When making this as a meal prep it can count for four servings. Each serving consists of 1/3 red container, 1/4 purple, 1/4 green, 1/4 blue, 1/4 orange and 1/3 teaspoon.
