Sushi without the roll- quick and just as tasty!
Love sushi but not trying to roll it yourself? The answer is to just throw it in a bowl! I have been excited about making sushi before and then immediately discouraged as it fell apart, stuck to my hands and just turned out to be a dinner disaster. Skip the rolling and just grab a fork!
Start by cooking the quinoa. I chose a trio blend of red, white and black. While this cooks you can prep the fruit and veggies! Cut the multi-colored carrots into sticks. I did the same with the cucumber, then the avocado and mango as best as possible.
When the quinoa is ready put some in a bowl and then add in all the produce and seaweed paper. Drizzle with some light soy sauce and enjoy!
I use this brand any time I want to buy seaweed sheets. They have so many tasty versions!
- Start by cooking the quinoa on the stove. This usually takes about 15 minutes so you can prep the fruit and veggies in the meantime.
- Slice the carrots and cucumber into sticks. Remove the skin and seed from the mango and avocado and then cut in the same way.
- When the quinoa is ready put some in a bowl and then add in all the produce and seaweed paper. Drizzle with some light soy sauce and enjoy!
The cook time is only for the quinoa.
