Cranberry-Pomegranate Pistachio Christmas Bark

What better Christmas cheer is there than a homemade treat shared with those you love?

I personally love making homemade snacks and treats to give out as gifts around the holidays. Who doesn’t love an edible present? Homemade Christmas bark is one of the easiest desserts to put together- it only takes about half an hour!

Pistachio, Cashew and Cranberry Christmas Bark Recipe

For the chocolate you can choose chips or a bar. Melt the chocolate in a microwave safe bowl for 30 second intervals, stirring in-between. Once completely melted pour the chocolate over a baking sheet lined with parchment paper.

Chocolate with cacao is a great choice if you are trying to keep this recipe healthier, especially if you choose dark!

Sprinkle the nuts and fruit over the top and slightly press them in to the chocolate. I chose to chop my nuts into fine pieces so they stick in to the chocolate better. It’s definitely important to make sure they aren’t just sitting on top or they will fall off once ready. Place in the freezer for at least half an hour. Once hardened just cut up or break into pieces! The bark can be stored in a cool place and should stay fresh for a week or two.

I have made this with both cranberries and pomegranates. Either one gives a beautiful splash of red and a burst of sweetness. I personally liked the addition of cashews because it provided the red, white and green color scheme!

No bake cranberry-pomegranate and pistachio chocolate bark.

Ingredients
  

  • 8 0z chocolate
  • 1/2 cup pistachios
  • 1/2 cup dried cranberries
  • 1/2 cup cashews

Instructions
 

  • Line a baking sheet with parchment paper. Melt the chocolate in a microwave safe bowl for 30 second intervals, stirring in-between. Once completely melted pour the chocolate over the prepared baking sheet.
  • Sprinkle the nuts and fruit over the top and slightly press them in to the chocolate. Place in the freezer for at least half an hour.
  • Once hardened just cut up or break into pieces! Can be stored in a cool place.

Notes

Fresh pomegranates can be used in place of the dried cranberries.

I wrapped these up in little gift bags and they were perfectly festive for Christmas! I will admit I have made this multiple years in a row!
