Dips are always a hit anytime you have people over, and there are so many options! They are usually a must for us when we entertain because it makes for easy munching and can feed a crowd.
This year we hosted Thanksgiving for our families and I really wanted to come up with a new type of cheese dip as an appetizer. The main thing I was looking for is what would taste ridiculously good, but still be somewhat healthy? My mom loves caprese salads so I thought I would surprise her with a caprese dip!
Melted cheese is without a doubt one of my main guilt foods. However, with this dip you get some goodness in to your body too! All you have to do is cube up some mozzarella, chop up some spinach and basil, dice tomatoes and throw them in a crock pot with a drizzle of balsamic vinegar.
A dip like this works for a fancy or casual occasion, so whether it’s served in a nice dish when you host a formal event or in a bowl by the lake at the next holiday celebration it is guaranteed to be talked about.
It was such a success that there is no after photo- the caprese dip was eaten before the cheese even melted! I’d say that is definitely a dip to remember next time you need to contribute to the gathering. This cheese dip is easy to put together and doesn’t take many ingredients. Plus it adds a whole new twist to a favorite appetizer!
I would suggest adding the tomatoes towards the end just because they can produce quite a bit of water. Other than that the dip practically makes itself once it all melts together. Just serve with crackers of your choosing! This fits in for any type of party at any time of the year, which is a big reason why I love it so much.
Note: I chose to use two different types of mozzarella- one hard block type and one soft log.
I will say that it took me some time to cut up all the basil. In the future I am definitely going to look into one of these!
