Bruschetta Chicken Sheet Pan Dinner

A gourmet dinner doesn’t have to take your entire night to prep!

Looking to impress but don’t have hours to spend in the kitchen? No need! That’s what sheet pan dinners are for! Ease, taste and yes, even presentation- all on one pan! Lately I have become a huge fan of these with my busy schedule. I still want to be able to put a nice dinner on the table, but of course…. quickly and efficiently.

My love of caprese salads is pretty major, so I figured I would do a little twist on this popular recipe trend and morph it into a chicken dish. What resulted was a delicious bruschetta chicken dinner, all baked together on one pan!

Bruschetta Chicken Sheet Pan Dinner recipe

For this recipe I used mostly dry seasonings simply to save time. You can of course use fresh minced garlic and chop an onion up too if you would like. I did choose to cut up my veggies (cherry tomatoes and asparagus) but for quick convenience you can just throw them straight on to the pan whole.

Start by rubbing the chicken in some olive oil, then slightly season. Arrange all on to a coated or non-grease pan. Drizzle with olive oil and sprinkle with the seasonings where it is needed. Place the cheese and then basil on top of the chicken. Sprinkle balsamic over everything.

Talk about saving time in the kitchen!

Bake at 400F for 25 minutes, then remove and let the feast begin!

I seriously think this is one of my favorite chicken recipes! I know I already plan to make it for my mom for Mother’s Day… maybe with the addition of artichokes!

Bruschetta Chicken Sheet Pan Dinner

Chicken with cheese, basil and veggies baked on one pan.

Ingredients
  

  • 2 chicken breasts boneless skinless
  • 1 bunch asparagus
  • 1 cup cherry tomatoes
  • 2 slices mozzarella cheese
  • 1/2 bunches basil leaves
  • 2 tbsp olive oil extra virgin
  • 2 tbsp balsamic vinegar
  • 1 tsp italian seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 3/4 tsp pepper
  • 1/4 tsp sea salt

Instructions
 

  • Cutting the tomatoes and asparagus up is optional. Fresh onion and garlic can be used as well if preferred.

Now that we have all decided this tastes just as good as it looks, I am just going to go ahead and ask a question. What is the reasoning behind this recipe being called ‘bruschetta chicken’ vs ‘caprese chicken’…? There is no bread involved, and most all ingredients are traditional caprese style. I would change the name, although that doesn’t appear to be correct. The random ponderings of a food blogger….

You can always use this as a meal prep too! When I made it my husband was out of town for work so I had quite a bit that I couldn’t finish on my own. Good thing I love leftovers! Cooking like this makes preparing meals for the week so, so easy- hardly any clean up involved, minimal ingredients and it took less than half an hour to cook! Plus, this recipe was less than $10 total. Talk about saving money for the week ahead!

This recipe is gluten free! It is also low carb since you don’t have any added starches, like rice. You CAN get full with a clean eating lifestyle.

When making this as part of a meal prep it counts for 2 servings. Each of those servings consists of 2 red containers, 1/2 of a green container, 1 blue container and 3 tsp.
I actually made my entire sheet pan dinner count for 4 servings. It really depends on your overall calorie intake, but if you do the same then half the container counts above.
