Avocado Grapefruit Brussels & Greens

Put an avocado on it!

My husband doesn’t really get the avocado craze…. I just tell him he is definitely missing out. I am one of those people that puts an avocado on everything. So, naturally, I made a salad with avocado in it aaaand a creamy avocado dressing to go with it!

This kale salad has about 5 ingredients and an easy, creamy homemade citrus dressing! Chop, toss and serve in 10 minutes! Start by washing all the veggies. I chose kale for my greens, then avocado of course and also some brussels sprouts. Tear the kale in to bite sized pieces and place in a bowl. Cut the ends off the Brussels and half them. For my citrus I went with grapefruit, so just peel and cube one. Squeeze the juice in to a small bowl. Half the avocado, remove the seed and cube one side, saving the other for the dressing.

The green citrus vinaigrette is delicious and can be put together in seconds. For this dressing just add the fresh squeezed grapefruit juice and half the avocado to a food processor. Pour in a tablespoon of extra virgin olive oil and pulse. Sprinkle a little sea salt and pepper. Seriously, that’s it.

Add the grapefruit, avocado and brussels plus walnuts to the bowl of kale. Drizzle the homemade dressing over and toss!

There is a reason I call this a power salad, and it’s mostly all in the kale! As the base of this bowl of greens it is low calorie but high in fiber. Did you know it also has zero fat? That’s right- zero. I love kale because I tend to be deficient in iron, and eating these leafy greens definitely helps with that! Eat up because it’s definitely worth the benefits.

Ingredients
  

  • 1 bunch kale
  • 1 cup brussels sprouts
  • 1 grapefruit
  • 1 avocado
  • 1/4 cup walnuts
  • 1 tbsp extra virgin olive oil
  • 1/4 tsp sea salt/pepper

Instructions
