Too busy to cook healthy? Do you get bored of the same food over and over when you meal prep? With make ahead freezer meals you can cook whenever! These Mexican style chicken freezer meals are easy, budget friendly and flavorful so you can have a healthy, ready to eat meal on hand!
I put two freezer friendly chicken recipes together at the same time because they had relatively similar ingredients- Chili Cilantro Lime Chicken and Chipotle Lime Chicken. The key to freezer meals is to make in bulk so you have multiple. This usually saves money and time because you buy everything once, chop it all together and don’t have to make the marinade or seasoning over and over.
Just a tip- fresh bell peppers are a simple vegetable I have chopped up and bagged in my freezer at all times! They are so easy to throw in to a rice or add to any dish if you forgot to grab some produce from the store and need some veggies to go with a meal.
Chili Cilantro Lime Chicken
-6 chicken breasts (boneless & skinless)
-2 green bell peppers
-1 sweet potato
-1/2 red onion
-2 tbsp cilantro
-2 limes
-3 tsp chili powder
-2 tsp cumin
-2 cloves garlic
-1/4 cup chicken broth
Dice the sweet potato, bell pepper and onion then set aside. Mince the garlic. Whisk all wet ingredients and spices together and pour over raw chicken breasts in a freezer friendly bag. Add in the veggies, close the bag and shake to mix. Store and cook within a few months! This recipe is best for a baked dish (400F for about 30 minutes) or skillet meal (medium heat for about 30 minutes).
Chipotle Lime Chicken
-6 chicken breasts (boneless & skinless)
-chipotle peppers in adobo sauce (1 can)
-corn (1 can)
-black beans (1 can)
-2 limes
-1/2 onion
-2 cloves garlic
-3 tbsp agave
-2 tbsp brown sugar
-1/4 cup chicken broth
Dice (or blend) chipotle peppers- save the sauce! Evenly distribute over the raw chicken breasts in a freezer friendly bag. Squeeze lime juice and sprinkle seasonings over all. Chop the onion and mince the garlic and add in along with the other veggies. Close the bag and shake to mix. Store and cook within a few months! This recipe is best for a baked dish (400F for about 30 minutes) or skillet meal (medium heat for about 30 minutes).
Each recipe makes 3 separate freezer meals for about 2 people (as long as you pack 2 chicken breasts per bag). Customize as needed! You can also use chicken thighs instead of breasts for either of these.
