Need a side dish that never fails?
I always wonder what my number one recipe will be. What will I be known for? What will my kids ask me to make all the time? What will be the request at the family gatherings and potlucks? A recipe like this is one that never fails, one that you continuously make to perfection every time…. effortlessly. When I think of recipes like this in my household growing up there is one that definitely comes to mind- sautéed potatoes with chopped veggies. My mom still makes this all the time, and that’s because it’s one of those side dishes that is easy to put together, budget friendly and tasty!
All you need is red potatoes, some tri-colored bell peppers, onion, garlic and a bit of seasoning. Do not peel the potatoes, just thin slice them into quarter inch rounds. Dice all of the veggies and mince the garlic. For the bell peppers I used green, red and yellow, but only less than half of each one.
Heat the oil in a skillet and caramelize the onions and garlic. Adding in a tablespoon of butter happens from time to time, for extra goodness! Throw in the bell peppers and then sauté the potatoes on medium-high heat for a few minutes until slightly soft and browned. Sprinkle with the Italian seasoning, pepper and a dash of sea salt. The secret to this recipe is that the potatoes are both sautéed and roasted. After about 5-10 minutes transfer everything in to a baking dish and place in the oven at 425F for about 15 minutes.
Chopped Veggie Potato Rounds
Ingredients
- 12 red potatoes small-medium
- 1/2 onion
- 1/2 cup bell peppers tri-colored
- 2 tbsp olive oil
- 1 clove garlic
- 1 tsp italian seasoning
- 1/2 tsp black pepper
- 1/4 tsp sea salt
Instructions

- Then put in oven at 425F for 15 minutes. Remove and serve warm.
These sliced potato rounds with chopped veggies are a side dish that you will use again and again. This recipe was a staple for me growing up, so from my home to yours I hope it continues on!
