  1. Peel and dice the red beet. Next, chop some bacon to the same size pieces.
  2. Drizzle a little oil in to a pan and sauté the beet and bacon bits on medium-high heat. When they are almost done crack the eggs in and cook to just over easy. The grits can be cooking separately during this time.
  3. Place the grits in a bowl and cover them with the eggs. Top it off with the beets and bacon and then dig in!
