Peel and dice the red beet. Next, chop some bacon to the same size pieces.
Drizzle a little oil in to a pan and sauté the beet and bacon bits on medium-high heat. When they are almost done crack the eggs in and cook to just over easy. The grits can be cooking separately during this time.
Place the grits in a bowl and cover them with the eggs. Top it off with the beets and bacon and then dig in!
