Southern cooking with a foodie flare!
I grew up on cream of wheat and it was probably one of my favorite warm breakfasts. It took me a while to get into grits but now I really love this healthier option! Of course I love cheesy shrimp and grits with bacon crumbles, but I wanted to try a different way of cooking with grits for breakfast.
Grits are an easy filler to dress up. These eggs and grits are topped with beet and bacon bits for a truly delicious and savory breakfast! If you like the idea of pairing eggs and beets I suggest checking out this recipe too!
I started off by peeling and dicing a red beet. Next, chop some bacon to the same size pieces. Drizzle a little oil in to a pan and sauté the beet and bacon bits on medium-high heat. When they are almost done crack the eggs in.
I warmed up the grits in a separate pot while the beets and bacon were cooking. I suggest making your grits with a little milk rather than just water. This makes it creamier! Once everything was ready I placed the grits in a bowl and covered them with the egg. Top it off with the beets and bacon and then dig in! I suggest an over easy egg so the runny yolk will soak in to the grits.
