Skillet potatoes and meat- a simple breakfast hash at it’s best!
I really enjoy cooking a good meal to start the day on a weekend morning. While I do take advantage of the extra time to try to get creative, sometimes it’s nice to just make a basic hot meal. You can never go wrong with a breakfast staple- a classic sausage and potato hash!
Peel and slice a russet and a sweet potato. I did about 1-2 inch strips and a quarter inch thick. Heat oil in a skillet and cook on medium-high heat, stirring often. I used a cast iron skillet because I always prefer the extra flavoring in these type of meals. Sprinkle with some onion powder, pepper and a little sea-salt to season.
To make things easier I highly recommend using one of these!
While the potatoes cook go ahead and slice the sausage links into thin rounds and then half them. Add the sausage to the skillet and cook for another five minutes.
Mix all together and then serve! The crispy outer coating and tender inside is absolute hash perfection.
I chose to pair mine with an egg! If I wasn’t the only one in the household who ate eggs then I would have for sure cracked a few over the skillet hash as it cooked. I highly recommend doing it that way if you have never tried it. Overall this was easy, filling and totally won my guy over too!
How interesting is this cutting board?? I may have to try one of these out! It would make it a lot easier to transfer everything.

It really depends on how strict you are with your Paleo diet and if you use the right kind of sausage to stay Whole30 compliant.
