Kick start your morning with homemade pumpkin spice breakfast bars!
There are two types of people in this world- the ones who anxiously await and rejoice for pumpkin season and the ones who don’t understand and scoff at it. I am the type that is up for pumpkin anything at any time.
The other day I was in the grocery store check out line awaiting my turn when I zoned in to hear the cashier mentioning pumpkin spice flavor. I see her holding a box of cheerios and discussing the new cereal flavor with the customer in front of me. I assessed the amount of items still left to be rung up and announced that I would be right back, heading in the direction of the cereal aisle. Yes, I am addicted to pumpkin.
I also love that these pumpkin spice cheerios are gluten free! I thought these were perfection, but purchased the family size box and never have time for cereal. What to do with all these cheerios? Make some breakfast bars of course! I had originally wanted to make some trail mix, but I didn’t have anything prepped for the week for me to take for breakfast. This morphed into the concept of trail mix breakfast bars instead.
Homemade breakfast bars are extremely easy to put together. I love how customizable they are and of course being aware of every single ingredient that is going into them. For these I chose oats, goji berries, two different types of almonds (roasted and marconi), pumpkin seeds, shredded coconut, cocoa granola, chia seeds and of course the pumpkin spice cheerios. The mixture that holds them together is a blend of peanut butter, honey, dates and coconut oil.
Begin by placing the pitted dates in a food processor and pulsing until smooth. I would soak these some before blending. Heat up the peanut butter, honey and coconut oil separately and stir until creamy. Pour over a bowl of the dry ingredients and mix together until fully coated. Line a baking sheet or pan with parchment paper, then spread the mixture out and flatten until all formed together. When ready freeze for 10 minutes so they are hard enough to cut into bars. Afterwards just store in an air tight container in the fridge!
