Deconstructed Vegan Sushi Bowl
A sushi roll in a bowl- with carrots, mango, avocado, cucumber, seaweed and quinoa!

Start by cooking the quinoa on the stove. This usually takes about 15 minutes so you can prep the fruit and veggies in the meantime.
Slice the carrots and cucumber into sticks. Remove the skin and seed from the mango and avocado and then cut in the same way.
When the quinoa is ready put some in a bowl and then add in all the produce and seaweed paper. Drizzle with some light soy sauce and enjoy!
The cook time is only for the quinoa.
