Crockpot Apple Pumpkin Chicken

Still think chicken is boring?

I often hear people say that they aren’t a huge fan of chicken. To me, it is one of the easiest meats to transform. Get creative in the kitchen and you just might change your mind about it. How about some pumpkin chicken?

For fall and winter food we often think of turkey in particular, but not so much chicken. I decided to change this by creating a new recipe for the season. Crockpot meals are always a win when you have a busy schedule, which comes in particularly handy during the holidays. Around this time of year pumpkin gets used in almost everything… for good reason. Instead of using just pumpkin flavoring I decided to use a whole can of pumpkin to create a sauce. Lately I have been experimenting with baking fruit, and wondering why I never used to do this before. Pumpkin and apples are a wonderful pair for a fall dish!

Pour one can of pumpkin puree into a crockpot and add in the seasonings. Place in two chicken breasts and cook on low for about 4 hours.

Check to make sure the chicken is tender and shred apart. Cut up an apple and add in with the pumpkin chicken.

I used to have one of these in my kitchen and miss it so much!

Cook for another hour or so. I chose to add in some french green beans as well, and these only need to cook for about half an hour in the crockpot. Red and green seemed like good colors to go with the orange of the pumpkin! More importantly, this dish is a complete serving of meat, vegetables and fruit.

Crockpot Apple Pumpkin Chicken

Cook Time 6 hours
Total Time 6 hours 5 minutes

Ingredients
  

  • 2 8oz chicken breasts boneless skinless
  • 12 oz pumpkin puree
  • 1 red apple medium
  • 4 oz green beans french
  • 2 tsp thyme
  • 2 tsp ginger
  • 1/2 tsp pepper
  • 1/4 tsp sea salt

Instructions
 

  • Pour one can of pumpkin puree into a crockpot and add in the seasonings. Place in two chicken breasts and cook on low for about 4 hours.
  • Shred the chicken apart by stirring. Cut up an apple and add it in to the crockpot. Cook for another hour or two.
  • In the last half hour add in some french green beans (snap them in half).
  • Serve warm when ready!

To serve I put mine over some parmesan risotto. This apple pumpkin chicken was so creamy and satisfying- a perfect holiday comfort food!
