  1. Do not peel the potatoes, just thin slice them into quarter inch rounds. Dice all of the veggies and mince the garlic.
  2. Heat the oil in a skillet and caramelize the onions and garlic. Throw in the bell peppers and then sauté the potatoes on medium-high heat for a few minutes until slightly soft and browned. Sprinkle with the seasonings.
  3. Then put in oven at 425F for 15 minutes. Remove and serve warm.
