Campfire Superfood Banana Boats

Tired of marshmallows on a stick around the fire? 

When you go camping the one and only dessert that seems to come to mind is s’mores. Years ago someone mentioned banana boats to me and I wondered why I had never heard of making them. On a recent camping trip I decided now was the time to try these for myself!

Superfood Campfire Banana Boats recipe

A banana boat is pretty simple really- just slice a banana in half, stuff the middle with your filling of choice and wrap in foil. You place it over the campfire for a few minutes to get all gooey and then dig in! I kept seeing recipes online for banana boats with graham crackers, chocolate and marshmallows but I really wanted to change things up.

Since it’s me, I of course wanted a somewhat healthy option and had to throw in a superfood somehow. I chose some hazelnut chocolate, goji berries and various nuts and seeds. The result was absolutely heavenly! Let’s just say it was a huge hit….

Start by slicing an unpeeled banana partially in half. Make sure you don’t go all the way through! Place the banana in some foil. I double wrapped it just so it would be easier to move around.

Next set out all of your ingredients you want to fill the banana boats with. Pile them in to the middle of each boat until full. I also broke up some chocolate cookies (link to the brand I used is at the end of the post). It really set it off having this addition mixed in! When they are ready just heat them up over the fire for a bit and then dig in!

Campfire Superfood Banana Boats

Banana Boats with goji berries, chocolate, nuts and seeds.

Cook Time 7 minutes
Total Time 17 minutes

Servings 3 people

Ingredients
  

  • 3 bananas
  • 2 tbsp almonds sliced
  • 2 tbsp pecans pieces
  • 2 tbsp pumpkin seeds
  • 2 tbsp goji berries
  • 2 tbsp chocolate chips

Instructions
 

  • Start by slicing an unpeeled banana partially in half (don't go all the way through). Place the banana in some foil with the center exposed.
  • Fill the middle with your toppings of choice.
  • Place over heat for a few minutes so the banana gets soft. Once it's cooked to your liking remove and eat up!

Notes

These are not just meant for the campfire- you can bake these in the oven too!
