  1. Cook the grits and bacon while you peel and chop the beets and onion.
  2. Whisk the eggs with milk in a bowl. Add in the grifts when done and stir until creamy. Pour in the chopped beets and bacon pieces. Sprinkle in the shredded cheese and seasonings.
  3. Spray a 12 cup muffin pan and fill with the mixture. Bake at 375F for 20 minutes.
  4. Remove from oven and let cool some before serving.
