Why haven’t I put figs and bacon together sooner?

There are quite a few fig trees in my neighborhood so I was scheming during the week about what to cook for the upcoming weekend morning with some fresh figs. Bacon is usually included for Saturday or Sunday breakfast dishes, so the idea of combining that with the fruit on hand sounded like a must. The result was a sweet and savory bacon and fig cheese breakfast pastry!

I have never made a puff pastry before but this just opened all kinds of new doors for me in the kitchen! I bought my dough pre-frozen, but maybe in the future I will tackle that part on my own. I noticed quite a few cheesy puff pastry recipes online called for Gruyere, but I tried out Havarti instead due to the cost. I was not disappointed with my selection!

Prep the pastry toppings by slicing the cheese, cutting the bacon in half and quartering the figs. I had picked about 10 figs to use for this recipe.

Next set out the thawed pastry to form. I suggest using a cooking sheet with parchment paper to place it on, but I was out at the time. Instead, I just lightly greased a bread pan and it seemed to work out just fine. Fold in the edges of the dough slightly so it can hold in all the goodies! Put the thinly sliced cheese on as the first layer.

Cook the bacon until it’s almost done to your liking, then place on top of the cheese on the puff pastry. Arrange the fig slices around the bacon and then place in the oven. Bake at 425 for 20 minutes.

Remove from oven and give the pastry a few minutes to flatten (mine was so puffed up at first that the figs were rolling off). Drizzle with agave and sprinkle with some shaved almonds, then serve warm!

Ingredients
  

  • 1 package bacon
  • 3/4 cup figs
  • 8 oz cheese havarti or gruyere
  • 2 sheets puff pastry
  • 4 tbsp almonds shaved
  • 2 tbsp agave nectar

Instructions
 

  • Prep the pastry toppings by slicing the cheese, cutting the bacon in half and quartering the figs.
  • Form the thawed pastry by folding in the edges of the dough slightly. Place the cheese in the center.
  • Cook the bacon until it is almost done, then arrange with the fig slices on top of the cheese. Bake at 425 for 20 minutes.
  • Remove from oven and give the pastry a few minutes to flatten, then drizzle with agave and sprinkle with some shaved almonds. Serve warm!

This recipe was a major keeper, and my guy isn’t even all that wild about figs. While he ate this he said at least three different times how good it was. I foresee another bacon and fig cheese breakfast pastry being made very soon..! I’m already planning to make this for my Dad the next time I am visiting home since he is the one who introduced me to this delicious fruit.

    I have a fig tree in my backyard. Never tried a recipe with them. This is great. I am going to try this when the figs ready to pick.:) Thank you for sharing the recipe.
