Avocado Grapefruit Brussels & Greens
Brussels and kale salad with grapefruit, avocado and walnuts in a creamy citrus vinaigrette.

  1. Wash all the veggies. Tear the kale in to bite sized pieces and place in a bowl. Cut the ends off the brussels and half them. Peel the grapefruit and cube. Squeeze the juice in to a small bowl. Half the avocado, remove the seed and cube one side, saving the other for the dressing.
  2. For the dressing add the fresh squeezed grapefruit juice and half the avocado to a food processor. Pour in a tablespoon of extra virgin olive oil and pulse. Sprinkle a little sea salt and pepper.
  3. Add the grapefruit, avocado and brussels plus walnuts to the bowl of kale. Drizzle the homemade dressing over and toss!
