Superfood Energy Balls

You can pack energy balls with protein, so go ahead and coat them with some superfoods too!

I am a big believer that you should not skip breakfast- it really is the most important meal of the day! However, I definitely understand feeling like you just don’t have the time to eat a decent morning meal during the workweek. One of the things I definitely try to promote often is how to get an adequate morning intake with a hectic schedule.

The easiest thing for me is to make a smoothie and grab a filling snack item to go with it. On Sundays I will sometimes make my own breakfast bars for the week. I am a huge fan of these because the ones you purchase can be filled with bad hidden ingredients and also quite costly. Making your own version of something similar can seem like a daunting task but its really quite simple! To have some variety I do energy balls from time to time instead of the bars. For both of these you will need a base to hold everything together. I choose to use dates often because they add extra natural sweetness. I always purchase the pitted kind just to make life easier….

You can mix anything in to these- the possibilities are endless! I have made so many varieties of breakfast bars and energy balls with different mix-ins or toppings. I usually add the powder inside of these and knead it into the blended dates, but I felt like trying something different this time!

-First put the dates in a food processor (I recommend soaking them for about an hour first).
-Then mix with some coconut oil so the powders have a coating to stick to.
-Next add your desired mix-ins. I chose chia seeds, pumpkin seeds and almonds for this particular recipe.

Once you have it all mixed together it’s time to roll the packed dates into a ball shape. I knead with my hands because it’s just easier, but it definitely gets messy! For a decent amount of nutrients I make my date balls about 1″ in diameter.

From here I had a little fun deciding which powders to roll my date balls in! I have superfoods on hand from my smoothies so I picked out maca, goji and matcha. For an added variety I also chose cocoa powder and coconut shavings, then just for a test I tried one with turmeric! I dropped each ball into the powder until it was fully coated.

Once all of them are covered just place in an air tight container in the fridge for at least an hour. I had mine in there overnight before I tried one, then they kept for about a week. These may look complicated, but they can be put together in about 20 minutes! Get creative and start experimenting- it will definitely give you something to look forward to early in the morning!
